Farfalle with Yellow Cherry Tomato Sauce

Pasta is my favourite meal. So whenever we’re not sure on what to make for dinner, my answer will always be pasta because it’s so versatile and simple to make. You can never go wrong with a plate of pasta!

I got the itch to try something new tonight and was inspired by the gorgeous yellow cherry tomatoes from our garden. So I collected whatever was ready to be picked and started prepping. The gears in my head started turning and I came up with this recipe:

Ingredients:

  • 2 cups of yellow cherry tomatoes
  • 3 large garlic cloves
  • 2 small yellow onions (or 1 large yellow onion)
  • 2 tbsp of Extra virgin olive oil (or enough to coat the bottom of the skillet)
  • 2 tbsp of butter
  • 1/3 cup of white wine
  • 1/2 tbsp of dried oregano
  • 1/2 tbsp dried basil
  • 1 1/2 tbs of salt (1 for pasta water & 1/2 for the sauce)
  • 1/4 cup of Parmigiano-Reggiano cheese
  • 1/3 cup of reserved pasta water
  • Farfalle pasta, 500gr
  • Fresh basil for garnish

I cut the tomatoes in halves and set them aside. Then I sliced the garlic into thick pieces and the yellow onions into thin wedges, but not too thin so they wouldn’t burn. Once my ingredients were ready, I set a large pot of water to boil while I started cooking.

I coated the bottom of a skillet with the EVOO and sautéed the onions and garlic for 2 minutes on high heat, then I added the cherry tomatoes and cooked on high heat for 4 minutes. Next, I added the dried oregano, basil, salt, cheese and stirred everything together.

Once they tomatoes softened, I added the white wine and butter, and I let that cook on medium-high heat for about 15 minutes and added the cheese. I let that simmer until the pasta was al dente and added the reserved pasta water to the skillet.
Since my sister isn’t too keen on sweated tomatoes, I poured the contents into a blender for about 1 minute and blended on high speed so I could create a creamy sauce.

After the pasta water was completely drained, I poured the sauce over the pasta and stirred everything together. I garnished the dish with more Parmigiano-Reggiano cheese and fresh basil and dug in!

I really enjoy trying new recipes and I’m really happy with the way this recipe turned out. It was delicious! I’m even happier that my family loved it; they had seconds which is the best compliment ever! I will definitely make this recipe again soon.
